I located Elias Matthews' obituary. With the connection to Wilkesboro, North Carolina and Henry County, Indiana, there is a possibility they MAY be Quakers.
There are other marriages in Henry County, Indiana in the same time frame as Elias and Sarah. They may be possible siblings/cousins of Elias:
Nancy Jane Matthews 15 Feb 1849 to Daniel Bradway
Frances A. Matthew 17 Dec 1840 to Amariah B. Taylor
James M. Matthew 9 May 1844 to Catherine B. Taylor
Catharine Matthew 7 Oct 1841 to Abraham J. SavageA cursory check looks like these possible siblings or cousins are the children of Edward Matthew and Elizabeth B. Epperly Matthew who ended up in Adams County, Iowa, It bears checking out.

Elias G. Matthews
17 December 1820 ---- 27 February 1909E. G. Matthews died Saturday morning, Feb. 27, at the home of his daughter, Mrs. B. F. Millay, near Queen City. The body was brought to Kirksville and after funeral services conducted by the Rev. Willis at the home of his daughter, Mrs. M. L. Beeman, 216 South Main St., was interred Sunday afternoon in Forest cemetery by the side of his wife who died twelve years ago.
Mr. Matthews was born in Wilkes Barre, [Wilkesboro] Wilkes county, North Carolina, Dec. 17, 1820; was married Jan. 17 [Jan. 18], 1842, to Sarah Covey in the state of Indiana [Henry County], to whom ten children were born, seven of whom survive: J. W. Matthews, Delano, Cal.; W.T. Matthews, Miltonvale, Kans, Mrs. M. L. Beeman, Kirksville; G. W. Matthews, Salina, Kans.; Mrs. B. F. Millay, Green City, Mo.; E. E. Matthews, Birmingham, Ala.; S. C. Matthews, New York City. There are also twenty-three grand children and fifteen great grand children.
Mr. Matthews went to California in 1850, came to Missouri fifty-one years ago and his home for most of that time has been in or near Kirksville where his life has been spent as a farmer or a merchant. He was esteemed by his neighbors and friends as a man of uprightness and fair dealing. He had made his home since the death of his wife with his two daughters.
