Carmen Marie (Knuth) Poulsen, 89, of Iowa City passed away Thursday, March 27, 2025, at her home surrounded by family to join the love of her life, Paul. Private services have been held with burial at St. Joseph Cemetery, Iowa City. In lieu of flowers, memorials may be made to Iowa City Hospice.

Carmen was born on August 29, 1935, in Lost Nation, IA the daughter of Hans and Nellie (Patterson) Knuth. She graduated from Lost Nation High School and attended Clark College. Carmen graduated from Mercy College of Nursing, Iowa City in September of 1957. She was united in marriage to Paul E. Poulsen, on September 14, 1957, in Iowa City; he preceded her in death on June 28, 1984. They owned many local area businesses, the most recognizable, Senor Pablos Restaurant in Iowa City. Our mother was such a selfless woman; always rooting for the underdog, whether it be sports, or an individual. Carmen lived her life for her family and wanted everyone to be happy. Nothing made her happier than a full house.

Carmen is survived by her seven children, Kevin Poulsen, of Iowa City, Krista Poulsen of Iowa City, Kendra (Jeff) Logan of Adel, Kelly (Mark) Pieper of Iowa City, Karina (Korby) Williams of Tiffin, Kurt (Kelly) Poulsen of Castle Rock, CO, and Kim Poulsen (Kurt Smith) of Iowa City; five siblings, Liz Paulson, Jake (Frances) Knuth, Ingrid (Dave) Goerdt, Adrian (Lori) Knuth and Sharon Knuth; and many nieces, nephews, grandchildren and great-grandchildren.

Carmen was preceded in death by her husband, Paul Poulsen; parents, Hans and Nellie Knuth; and two siblings, Norma and Cecil.
