APPLE BREAD l Cup sugar 2 Cups all purpose flour l teaspoon baking powder l teaspoon baking soda l/2 teaspoon salt l/2 Cup shortening 2 eggs l teaspoon vanilla 2 Cups chopped, pared apples (about 4 medium sized apples) l/2 Cup chopped nuts l Tablespoon sugar l teaspoon cinnamon. Heat oven to 350 degrees. Grease and flour loaf pan, 9x5x3. Mix one cup sugar, shortening, eggs and vanilla. Stir in flour, baking powder, baking soda, and salt until smooth. Stir in apples and nuts. Spread in pan. Mix l Tablespoon sugar and l teaspoon cinnamon, and sprinkle over top. Bake until wooden toothpick in center comes clean, 50-60 minutes. Immediately remove from pan to rack. Griddle Cakes 2 cups white flour 4 tsp. baking powder 3/4 tsp salt 2 cups milk 1 egg 1 tbsp melted fat Mix and sift the dry ingredients. Place the griddle where it will heat. Add half the milk to the dry ingredients and beat until smooth. Add the rest of the milk,. the beaten egg, and the fat. Oil the griddle and drop the batter on it by spoonfuls. When the cakes are browned on one side and well puffed turn them to brown the other side. Serve immediately. Contributed by lilliew@alltel.net. These pancakes are the best I have ever eaten. DATE NUT BREAD
Pour boiling water over dates and cool. Cream sugar and shortening; add eggs and vanilla. Sift dry ingredients together and add alternately with the date mixture and nuts. Bake at 325 degrees first 10 minutes; then 350 degrees for 30 minutes or until done. *transcriber note: vanilla was not listed in the ingredients. SWEET MILK CORN BREAD
